‘Juan and Maria’s Empanada Stop’ Student Case Competition

On Friday, August 28 the incoming M.B.A. and M.S. students enrolled in ELUSC gave their course capstone presentations in a case competition based on a Rochester family-owned business.  Student teams offered case analysis and recommendations for business growth opportunities for Juan and Maria’s Empanada Stop, a restaurant that serves at the Rochester Public Market and recently opened a second location in East Rochester.  Throughout the spring and summer, students met regularly with business owners Juan and Maria Contreras, staff and customers at both establishments to develop their recommendations.

The presentations were preceded by a tasting of the famous empanadas and delicious homemade Spanish sauces.  Juan Contreras expressed his pleasure with the students' advice to the facebook fan community for Juan and Maria’s Empanada Stop: Juan“What a presentation! The perspective! The excitement! The research! The knowledge that was displayed by the 21 MBA students from Simon School of Business from the University of Rochester. They gave us a lot of ideas as to how we can grow Juan & Maria's Empanada Stop and how to take it to the next level. We are planning on honoring all 21 MBA students on the 13th of September at the Rochester Public Market.” Congratulations to the ELUSC students on a successful capstone presentation!

2425722848_8980058cd8 Juan and Maria’s Empanada Stop is a gem in the city of Rochester and is currently growing the business by expanding their food product lines and shipping frozen foods to customers across the country.  They helped perfect this distribution through regular and generous donations to U.S. Troops in Iraq, the last shipment of Spanish foods weighing in at over 125 pounds!  Their business began in 2000 with 10-20 handmade empanadas being sold on Saturdays at the Rochester Public Market.  Now open 7 days a week, the sales record is 1,025 in one day, and a normal Saturday will see over 800 empanadas sold to market goers.

Juan and Maria’s Empanada Stop was one of my first culinary adventures when I moved to Rochester and I –like many loyal customers – am addicted to their Spanish foods.  I regularly take friends and out of town guests to the market to experience the atmosphere over a meal of fresh empanadas.  If you are planning a trip to Rochester, do not miss the Rochester Public Market on Saturdays and visit Juan and Maria’s Empanada Stop for some great food.  Do not forget to say hello Juan and Maria!
